2 cups sugar
2 tablespoons buttermilk
5 cups self-rising flour
1 teaspoon vanilla
Cream margarine, add sugar gradually. Add eggs one at a time then continue to beat. Add buttermilk and flour. Stir in vanilla. Chill the dough for several hours or overnight. Roll dough 1/4 inch thickness on a lightly floured surface. Cut into rounds using a three inch cutter. Place 1 inch apart on a lightly greased cookie sheet. Bake at 400 degrees for 6-7 minutes. Be sure your oven rack is positioned high enough, so the cookies will not burn on the bottom. Yields 4 dozen.
