Zesty Ziti
1 pound Italian Sausage links, cut into 1/2 inch chunks
1 onion, cut into strips
1 green bell pepper, seeded, julienned
1 tablespoon oil
1 (15 oz.) can diced tomatoes
1 (15 oz.) can Italian stewed tomatoes
2 tablespoons ketchup
1 (16 oz.) package ziti pasta
1 cup shredded mozzarella cheese
Preheat oven to 350 degrees. Cook sausage, onion and bell pepper in oil over medium heat in large skillet and drain. In separate bowl combine diced tomatoes, stewed tomatoes and ketchup and mix well.
Cook ziti according to package directions and drain. In large bowl, combine sausage-onion mixture and tomato mixture and toss with pasta and cheese. Spoon into greased 3-quart baking dish. Cover and bake for 20 minutes. Serves 4-6
Pizza Pies
1/2 pound bulk pork sausage
2/3 cup prepared pizza sauce
1 (10 oz.) package refrigerated pizza dough
1 cup shredded mozzarella cheese
Preheat oven to 400 degrees. Brown sausage in skillet and stir to break up pieces of meat. Drain fat, add pizza sauce and heat until bubbly. Unroll pizza dough, place on flat surface and pat into 8x12 rectangle. Cut into 6 squares. Divide sausage mixture evenly among squares and sprinkle with cheese. Lift one corner of each square and fold over filling to make triangle. Press edges together with tines of fork to seal. Bake about 12 minutes or until light golden brown. Serve immediately. Serves 2 to 4.
Sunshine Spareribs
5-6 pounds spareribs
1 (6 oz.) can frozen orange juice concentrate
Quesadilla Pie
1 (4 oz.) can diced green chilies
1/2 pound sausage, cooked, crumbled
2 cups shredded cheddar cheese
3 eggs, well beaten
1 1/2 cup milk
3/4 cup biscuit mix
Hot salsa
Preheat oven to 350 degrees. Sprinkle green chilies in sprayed 9 inch pie pan. Add layer of cooked sausage and layer of cheese. Combine eggs, milk and biscuit mix in bowl and mix well. Slowly pour over green chilies, sausage and cheese. Bake for 35 minutes or until center sets. Serve with salsa on top of each slice. Serves 4-6
Breakfast Bake
1 pound hot sausage, cooked, crumbled, drained
2 tablespoons dried onion flakes
1 cup shredded cheddar cheese
1 cup biscuit mix
5 eggs
2 cups milk
Preheat oven to 350 degrees. Place cooked sausage in sprayed 9x13 inch baking dish. Sprinkle with onion flakes and cheese. Combine biscuit mix, eggs, and a little salt and pepper in bowl. Beat well with fork (not mixer). Add milk, stir until fairly smooth and pour over sausage mixture. Cover and bake for 35 minutes. Serves 8 to 10.
