Oatmeal Cake
1 1/2 c boiling water
1 c quick oats
1 c sugar
1 1/2 c sifted flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 c butter
1 c brown sugar -firmly packed
2 eggs
1 teaspoon baking soda
1 teaspoon nutmeg
Pour boiling water over oats; mix well. Cream butter and sugar throughly. Beat in eggs. Stir in cooked oatmeal. Sift flour and remaining dry ingredients together. Stir into oatmeal mixture. Turn into greased 13x9x2 pan. Bake at 350 degrees for 30 to 35 minutes. Cool in pan. Spread topping, broil until golden about 5 minutes.
Topping:
1/4 cup brown sugar
1 cup flaked coconut
6 tablespoons oleo
1/4 teaspoon vanilla
1/2 cup sugar
1 cup chopped nuts
1/4 cup light cream
Combine all ingredients except vanilla. Heat until bubbly. Stir in vanilla. Spread on cake.
Yum Yum Pie
1/2 stick oleo
Peanut Butter Crunch Cookies
1/2 cup milnot
1 cup peanut butter
1 teaspoon vanilla (optional)
1 cup brown sugar or white sugar
1 1/8 cup rolled oats
Blend all ingredients throughly; drop by teaspoonfuls onto lightly greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until brown. Cool slightly. Remove from sheet and cool. Makes 48 cookies.
