Salmon Croquettes
1 potato peeled and diced
1 can salmon, drained with bones and skin removed
Salt and pepper to taste
1 tablespoon flour
1 egg
Cook potato until tender. Mix salmon, potato, seasoning and flour; mash with potato masher. Add egg. Flour hands, roll mixture into croquettes. Deep fry.
Squash Dressing
3 cups cornbread crumbs
2 cups cooked squash
2 sticks oleo
2 eggs
Breakfast Casserole
1 can biscuits
1 lb sausage
4 eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
Salt and pepper to taste
Press biscuits in bottom of 9x13 pan (sprayed with Pam). Brown sausage and drain. Spoon over biscuits. Mix eggs, cottage cheese and cheddar cheese. Pour over sausage. Bake 20 minutes at 350 degrees. Let set for a few minutes before cutting.
