Sad Cake
4 eggs
1 box light brown sugar
2 cups bisquick
3/4 cup oil
1 cup coconut
1 cup chocolate chips
1 cup pecans
2 teaspoon vanilla
1 small can evaporated milk
Mix and bake in 9x13 pan. Bake at 325 degrees for 35-40 minutes.

Marshmallow Cheesecake
16 squares graham crackers finely crushed (1 1/3 cup)
3 tablespoons sugar
3 tablespoons butter or margarine, melted
3 (8oz.) package cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla
3 eggs
1 1/2 cups semisweet chocolate chunks,divided
2 cups miniature marshmallows, divided
Mix graham crumbs, 3 tablespoons sugar and butter; press into bottom of 9 inch springform pan. Bake at 325 degrees (or 300 degrees if using a dark, nonstick springform pan) for 10 minutes. Cool. Mix cream cheese, 3/4 cup sugar and vanilla with electric mixer until well blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Stir in 1 cup each of the chocolate chunks and marshmallows. Pour over crust. Sprinkle with remaining 1/2 cup chocolate chunks and 1 cup marshmallows. Bake 50-55 minutes or until lightly browned. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Store leftover cheesecake in refrigerator. Garnish with whipped cream and crushed graham crackers.

Easy Coconut Cake
1 white cake mix
1 can cream de coco (melt in hot water while still in can)
12 oz. cool whip
1 cup coconut
Bake cake as directed on box and let cool. Use wooden spoon handle to poke holes in cake. Pour cream de coco into holes in cake. Top with cool whip and sprinkle with coconut.

Strawberry Cake and Icing
1 package white cake mix
1 package strawberry gelatin
1 cup salad oil

1/2 cup water
4 eggs
1/2 cup sliced strawberries
Place ingredients in bowl and mix well. Pour into greased and floured 9x13 pan. Bake at 350 degrees for 35-40 minutes.
Icing:
1/2 cup sliced strawberries
1 stick margarine
1 box powdered sugar
Cream margarine and add powdered sugar gradually until smooth. Stir in strawberries (until desired consistency) and spread over cooled cake.

Coffeecake
1 1/2 cup packed brown sugar
1 cup chopped nuts
1 teaspoon cinnamon
2 cups flour
1 cup sugar
2 teaspoon baking powder
1 teaspoon salt
2 package French vanilla instant pudding
1 cup water
3/4 cup oil
1 teaspoon vanilla
2 eggs
Mix brown sugar, nuts and cinnamon together; set aside. Mix remaining ingredients and beat for 2 minutes. Pour 1/3 of batter into a greased 9x13 pan and sprinkle with half the brown sugar mixture. Spread the rest of the batter and sprinkle with the rest of the brown sugar mixture. Bake at 350 degrees for 45 minutes.

Pecan Pie
1 cup pecan halves
3 eggs, beaten
1 tablespoon margarine, melted
Dash of salt
1 cup white syrup
1/2 cup sugar
Mix all together and pour into a 9 inch pie crust. Bake at 350 degrees for 40-45 minutes.
Pie is done when it puffs in center.
