German Fried Cabbage

1 tablespoon Crisco

Small head cabbage

1/2 cup chopped green pepper

1/2 cup chopped onion

Salt and pepper to taste

1/2 cup water

Melt Crisco in skillet. Chop cabbage into shreds. Put all ingredients in skillet. Cover with lid. Cook until tender and lightly browned. Do not let burn. You may need to add a little more water during cooking.

 

Stuffed Banana Peppers

8 peppers

1 cup seasoned breadcrumbs

1 egg, beaten

1 tablespoon garlic powder

Salt and pepper

Cut tops off peppers. Combine breadcrumbs, eggs, garlic, salt and pepper with mixture. Put open side of pepper against side of pan, which has been oiled. Bake at 350 degrees for 30 minutes. You may use hot or sweet peppers.

 

Fried Green Tomatoes

2 green tomatoes

Corn meal

Salt to taste

Oil for frying

Peel tomatoes (best to use tomatoes that have begun to turn light color). Slice in serving sizes. Dredge in corn meal that has salt and pepper in it. Fry in oil until golden brown, turning to brown on each side.

 

Fried Okra

Okra

Salt and pepper

Corn meal

Oil

Buttermilk

Wash and cut okra in bite size pieces. Salt and pepper to taste. Put on enough buttermilk to make corn meal stick to okra. Dredge okra in corn meal. Drop in hot oil (enough to cover okra) and deep fry until golden brown.

 

Snappy Carrots

1 can sliced carrots

1/4 cup brown sugar

1 tablespoon mustard

2 tablespoon margarine

Melt brown sugar, margarine and mustard over low heat until brown sugar is dissolved. Stir in carrots. Simmer for 15 to 20 minutes.
