Carrot Raisin Muffins
Diabetic/Low Calorie
1 cup flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup packed light brown sugar
1 cup carrots, coarsely grated
1/2 cup white wheat flour
1/2 teaspoon ground cinnamon
2 large eggs
3/4 cup buttermilk
1/4 cup vegetable oil
1/2 cup raisins

Carrot Raisin Muffins
Diabetic/Low Calorie
1 cup flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup packed light brown sugar
1 cup carrots, coarsely grated
1/2 cup white wheat flour
1/2 teaspoon ground cinnamon
2 large eggs
3/4 cup buttermilk
1/4 cup vegetable oil
1/2 cup raisins
Heat oven to 375. Lightly grease muffin cup or use foil or paper cups. Mix flours, baking powder, cinnamon, and salt in a large bowl. Whisk eggs and sugar in another bowl. When smooth, whisk in buttermilk and oil. Stir in carrots and raisins. Pour over flour mixture and fold in with a rubber spatula. Scoop batter into muffin cups. Bake 20 to 25 minutes, or until spring to touch in the center. Turn out on a rack.
Prime Rib Roast
Place a prime rib roast in a deep roasting pan. Cover the roast with rock salt and insert a meat thermometer. Cook roast at 325 degrees for approximately 20 minutes per pound. (ex.10 pound roast 3 hours 20 minutes). When roast is determined to reach desired doneness, uncover roast. Remove from pan, making sure all salt is brushed away. Carve and serve. There will be no aujus.
Swedish Meat Balls
1 1/2 pound hamburger
Cheese Cake
1 cup water
1 8 oz. cream cheese
1 pkg graham crackers
1 package reg lemon jello
1 stick oleo
2 tablespoon powdered sugar
1 can pet milk, chilled
2 tablespoon lemon juice
1cup sugar
Boil cup water, dissolve jello. Then add cream cheese. Set aside to cool in pan of ice water. Make crust of crackers, oleo and powdered sugar. Save some for top. Whip milk. Add sugar and lemon juice. Add to jello mixture. Pour in crust. Chill. Freezes well.
