Zucchini Bread

3 eggs

2 cups sugar

1 cup oil

2 cups flour

1 tablespoon cinnamon

2 cups grated zucchini

1 cup chopped pecans

2 teaspoon vanilla

Zucchini Bread
3 eggs
2 cups sugar
1 cup oil
2 cups flour
1 tablespoon cinnamon
2 cups grated zucchini
1 cup chopped pecans
2 teaspoon vanilla
Mix together and pour into two loaf pans or one large bundt pan. Cook at 350 degrees for 50-60 minutes.
 
All Season Bread
3 cups plain flour
2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
3/4 cup chopped nuts
3 eggs
2 cups sugar
1/4 cup oil
2 teaspoon vanilla
8 ounces crushed pineapple, drained
2 cups prepared fruit/vegetable
Combine flour, soda, salt, baking powder, cinnamon, and nuts; set aside. Beat eggs lightly in a large bowl; add sugar, oil vanilla, and beat until creamy. Drain pineapple, reserving juice. Stir in pineapple and fruit/vegetable. Add dry ingredients. Spoon batter into two well-greased and floured 9x5x3 inch loaf pans. Bake at 350 degrees for1hour. Cool 10 minutes and turn out onto cooling rack.
Choose One:
Apple — Peel, core and shred 2 medium apples to yield 2 cups.
Sweet Potato — Peel and shred potatoes to make 2 cups.
Carrot — Peel and shred carrots to make 2c ups. Stir in 1 tablespoon pineapple juice.
Zucchini — Shred zucchini to make 2 cups.
In two bundt pans, bake 45 minutes.
In eight individual loaf pans, bake 30-35 minutes.
In mini muffin pans, bake 15 minutes.
 
Cheesy Potato Bake
2 cans Campbell’s cream of potato soup
16 ounces sour cream
8 ounces cheddar cheese
1/2 cup Parmesan cheese
8 small baking potatoes, peeled and sliced thick
Place potatoes in bottom of 9x13 inch baking pan. Mix all other ingredients and pour over the potatoes. Bake covered at 375 degrees for 30 minutes and bake uncovered for 30 additional minutes.
 
Apples or Sweet Potatoes
1 1/2 cup water
3/4 cup sugar
1/4 cup light Karo syrup
Sliced apples or sweet potatoes
Mix water, sugar and syrup; cover and bring to a boil. Add apples or sweet potatoes to boiling liquid. Turn down the heat and simmer until juice thickens and apples or sweet potatoes are tender.
 
Sweet Potato Casserole
4 medium sweet potatoes, boiled, drained, peeled and mashed
1/2 cup sugar
1 teaspoon vanilla
1 stick oleo
2 eggs
Topping:
3/4 cup brown sugar
3/4 stick oleo
1/3 cup flour
1 cups chopped pecans
Mix well the cooked potatoes, 1/2 cup sugar, vanilla, 1 stick oleo, and eggs. Place in greased baking dish. Mix the topping ingredients and crumble over potato mixture. Bake at 350 degrees for 20 minutes.
